Recently, we went to a pick your own strawberry farm and ended up bringing home 7 pounds of yummy berries. I’ll admit we may have gotten a little carried away while picking and sampling….7 pounds is a lot of strawberries to eat before they go bad!
Determined not to let our hard work go to waste we decided to make freshly squeezed Strawberry Lemonade! There is nothing better on a hot summer day than an ice cold glass of lemonade! Reminds me of the Fair….freshly squeezed lemonade, funnel cakes and anything you can think of deep fried on a stick. Yum!
Fresh Squeezed Strawberry Lemonade
INGREDIENTS
3 cups quartered strawberries
2 cups fresh lemon juice – about 6 medium lemons
1 cup sugar
7 cups water ( 1 cup separated)
*OPTIONAL GARNISH: Strawberries, Mint, Lemon
DIRECTIONS
Combine 1 cup water and 1 cup sugar in a microwave safe bowl, heat to boiling and the sugar dissolves – allow to cool
Wash the lemons and strawberries in cold water
Remove the hulls/stems from the strawberries and slice them into quarters
Place the strawberries into a blender and pulse until pureed
Juice the lemons and add to the strawberry mixture
Strain the strawberry lemon mixture, optional (if there more seeds and pulp to your liking)
Mix 6 cups cold water, cooled water/sugar mixture and the strawberry lemon juice in a large pitcher
Stir until blended, refrigerate until cold and serve
*OPTIONAL GARNISH: slice strawberries and lemons, add fresh mint, wet the rim of a glass and dip in sugar

TIPS:
- A juicer is key! It doesn’t have to be fancy, but totally worth the investment
- Freeze for a slushy or popsicles
- Add a little white rum, muddled mint and lime for a Strawberry Mojito – yummy!
- Cube pineapple, soak in vodka and place each piece in an ice cube tray – when frozen add to a glass of lemonade
